Ever since I was a little girl I can always remember my daddy making my the best fried egg sandwiches in the whole wide world. They were not any old run of the mill sandwiches, they were special and saved just for the weekends. Naturally, crusts were cut off to enable the gooey yummy yoke to run all over the plate, and cut into perfect little squares so that every single bite could be savoured.
Buy oh how this sandwich has come to be my favourite feast to fix all matter of sins come the morning after the night before. Now moved on to not only house 2 eggs and multiple rashers of bacon, this momentous sandwich is now a full on feast of runny scrummy yumminess.
Here's what you need;
2 Eggs
2+ Rashers of bacon (the more the better)
2 slices of unbuttered bread (this allows for the bread to soak up the yoke)
Fry (or grill) the bacon till it is as crispy as you like it.
Followed by two eggs sunny side up so that the yoke is nice and runny.
Cut up the sandwich into whatever shape/style you fancy. I am triangle girl.
And serve it up with a big cup of your favourite cup of Joe.
Just look at the ooey gooey yoke.
Finger licking is encouraged!
